PECTINSUNIPECTINE™ is the trade mark for pectin produced by Degussa, who are globally recognised as one of the leading pectin producers. As well as a wide range of HM and LM citrus-based pectin, Degussa also manfacture Apple pectins. UNIPECTINE™ pectins are highly refined and purified extracts from citrus or apple peel, which have established their position as uniform gelling agents of high quality for jams, jellies and preserves. In the UK, Crestchem Ltd is appointed as the official distributor for the UNIPECTINE™ range. UNIPECTINE™ HM-PECTINHigh (methyl) ester pectin, with a degree of esterification above 50%. The material only forms a gel in systems with more than 55% sugar solids and a PH within a narrow range of around 3.0. HM pectin gels are difficult to melt down.
UNIPECTINE™ LM-PECTINLow (methyl) ester pectin, with a degree of esterification below 50%. The material requires less than 55% of sugar solids and the presence of small amounts of calcium ions in order to gel. Gels from LM pectin are thermo-reversible, when heated to 10-15°C above the gelling temperature. Amidated low ester pectins are normally able to gel at the natural calcium level of fruit and water. Non-amidated grades require the addition of extra calcium.
